where are the menu’s?

Did I ever tell you guys that consistency was not one of my virtues?  I try, my intentions are truly the best – but somehow my life always gets in the way. Thank G-d.

I hope none of you have fatally expired whilst holding your breath waiting for me.

The past two days I have had everyone sick, and been to the doctor 3 times, and one appointment off the island of Montreal. It’s been a little busy, and NO sleep whatsoever – so forgive me.

But I am going to submit my kids fave food in the entire world! When I tell them this is for supper – they could not be happier.

Are you ready?

Tomato Soup. Uh-huh.

homemade from scratch. Here is the recipe:

The yummiest easiest soup in the world

1tbs Olive oil

1 large onion diced small

2 x 1,89l of Tomato Juice

1 roasted pepper

(roast in oven at 450F for 10 mins, then 4 mins under grill at 500F. Remove from oven, place in a bowl and cover tightly with plastic wrap. Let cool. The pepper will sweat and the skin will just peel off.)

Salt and Pepper to taste.

1 cup of short grain brown rice ( optional)

Sautee onions till golden. Add tomato juice, bring to the boil, allow to simmer for 10 mins. Add Roasted pepper. Add Salt and pepper. Fill one empty can  (3/4)with cold water, add to soup.

Use immersion hand blender to puree everything.

Then if you like add rice and let cook for a further 20 mins.

We always add some grated cheese to the mix, et voila – c’est magnifique!

By the way, my kids would not go near a tomato with a 10 foot barge pole! Yet they guzzle this down like crazy. Try it – you’ll see.

Tomorrow I am going to roast some butternut and puree it in the soup. I will see if they notice a difference.

    1. but it was made with real chicken soup? how would that go down? I dont really remember so well now – but prob 2 onions, loads of carrots, loads of ginger and garlic, salt and pepper, chicken soup stock. That is it.

    My kids love tomato soup too! I make it with real tomatoes but its quite a bit of work, I love the idea of using tomato juice!!
